Super Bowl XLIX is nearly upon us. And Super Bowls mean Super Bowl Parties and abundant temptation from a bevy of (likely) non-paleo approved snacks. The following recipe isn’t exactly paleo, so it isn’t for strict paleo folks. But it is primal blueprint approved and gluten free. It is also easy to make and transport, and the kind of snack that all your non ancestral health friends will enjoy so it is the perfect snack to bring to a mixed company Super Bowl Party.

I use Neese’s Hot Country Sausage, which is a local North Carolina brand. Kerry Gold Reserve Cheddar is a great grass fed, aged cheddar option to use in this recipe, but any aged cheddar will do. I used Betty Crocker Gluten Free Bisquick mix. You could also make your own.

Yield: about 70 bites

Gluten Free Sausage Bites


  • 1 lb Aged Cheddar
  • 1 lb Hot Ground Sausage
  • 2 1/4 Cups Gluten Free Bisquick
  • 2 tsp Sriracha


  1. Grate cheese while cold. Remove sausage from package and crumble. Allow the cheese and sausage to come to room temperature in a large mixing bowl.
  2. Mix all ingredients together, adding the Bisquick to the bowl a little at a time.
  3. Form mixture in to 1/2 inch to 3/4 inch balls and place on a jelly roll pan.
  4. Flatten the balls with a fork.
  5. Bake at 400 degrees about 10 minutes or until snacks are browned on the bottom.
  6. If eating immediately, turn the snacks over and brown the other side (another 10 min or so) and serve.
  7. If serving latter, brown the one side only, then allow to cool and freeze in a plastic bag. When you are ready to cook them browned side up for 12 minutes until both sides are browned.


Pastured sausage works best, but at the very least, try to find hot sausage that doesn't contain MSG.
